Project Work

The module highlights the concepts of entrepreneurship and its application to the hospitality and culinary industry. The module examines the role of entrepreneurship, including corporate entrepreneurship/intrapreneurship, in the hospitality and culinary industry at a global level. The module explains the different steps involved in the entrepreneurial process and analyses the influence of the external environment on entrepreneurial activity in the hospitality and culinary industry. The module integrates the knowledge from a diverse managerial function, including marketing, finance, and human resources, and covers extensively the operation, organisation, and management of culinary entrepreneurial businesses. It also covers the study of the entrepreneurial organisation and management of small and medium family businesses and famous culinary entrepreneurial businesses in India and the world. The module also highlights the different skills and techniques to develop a business plan for new culinary ventures. 
The purpose of the module is to discuss the different theories and concepts of entrepreneurship and its application in the context of the hospitality and culinary industry. It will focus on different stages related to the entrepreneurial process, including business model, revenue generation, business operations management, as well as strategies that improve performance of new culinary ventures. Focussed on a mix of theoretical exploration as well as case studies, the module will also cover the contemporary challenges, opportunities and risks of culinary entrepreneurship. The module will also help to develop the key essential skills to examine and understand the role of culinary entrepreneurship in the global hospitality business. This will also help to integrate culinary entrepreneurship concepts and assess real-time business opportunities in the culinary world.
